Overview
The Yama Syphon Brewer is a modern version of an old coffee brewer design. The process is simple and elegant, but the final product is outstanding. Simply pour 21 oz. of water into the bottom glass and heat it over a butane burner until it slowly begins to boil (the Syphon is also available with a denatured alcohol burner). If it is heating too fast and boiling rapidly, monitor the heat source to ensure a slower boil. At this point, the water will rise into the upper glass and saturate the waiting grounds. Some even recommend waiting until about 1/2 - 3/4 of the water has risen to the upper glass to dump the grounds into the top glass. Once every last drop of flavor has been extracted from the ground beans (will take approximately 2 minutes depending upon desired strength), remove the flame and gravity will draw the coffee down through the tube (and filter) into the lower glass. To serve, remove the upper glass and use the built in handle to pour a fantastic cup of coffee.
The benefits of this system are that the water heats to the perfect brewing temperature, and that complete control over the process can be maintained at all times. Simply remove the heat source when you want saturation to be complete!

Brand
Yama has specialized in hand-blown glass coffee brewers and tea equipment since 1978. Yama is most well-known for it's Siphon Vacuum Brewers and Cold Coffee Brewers. The Siphon Brewer utilizes a heat source to boil the water and push it into an upper brewing chamber, then sucks the coffee down through a cloth filter back into the bottom chamber. The Siphon is the most visually captivating and hands on way of making coffee, sure to entertain guests and produce one of the cleanest cups of coffee you've ever had. Similarly to the Siphon Brewer, the Yama Cold Coffee Brewer looks more like science lab equipment than a coffee brewer. The Cold Brewer uses a slow dripping process to brew a strong concentrate of coffee normally served over ice.

Tampers are as diverse as the baristas who use them. Our new tamper meets the needs of almost any barista, whether professionally trained or newly beginning. (For a guest barista review, click here.) Anfim's Super Caimano espresso grinder, upon its initial release, was a solid addition to any high-end coffee house. It featured a 75mm flat burr set that helped to give a very consistent grind, allowing baristas to rely upon it for excellent shot-to-shot uniformity. When dialing in a coffee, the Super Caimano had 70 holes in its adjustment collar to allow for tinkering between shots. Now, however, Anfim has added an additional 20 spots for a total of 90 holes in the adjustment collar. The benefit of this? When dialing in and finding the sweet spot for any coffee being used to pull shots of espresso, a key factor the barista must take into consideration is the size of the grind particles. Yes, uniformity and consistency of those grind particles is also key, but the ability to make tiny, incremental adjustments is always helpful when striving to find the right balance of all a coffee's characteristics when pulled as espresso.
