Cupping is, to put it succinctly, sensory-testing. Filtered, almost-boiling water and ground coffee are combined and allowed to brew in cups, then smelled and slurped and spit out for evaluation. Over and over and over and over again. It's coffee quality control in its purest, most basic form, and should be done every day.
