Overview
Although 'professional' is in its name, the Ascaso Steel Uno is a consumer espresso machine titled for its professional features. The Ascaso Steel Professional series features a 58mm grouphead, a low-water cut-off, and brass boiler to name a few of the notable features. The main upgrade from the standard Ascaso Steel Uno Professional is the PID - a technologically innovative way for the user to control the temperature of the coffee boiler. This guarantees temperature stability and allows the water temperature to be catered towards the specific coffee you are using to provide a more consistent espresso extraction. This espresso machine is also satisfactory for a small office environment (approximately 5-10 people) as well as for those who use E.S.E. single dose pods on a regular basis.
Highlighted Features
- PID Temperature Programming allows user to change boiler temperature through the use of the digital display/control panel on the front panel of the machine. The display reads out the current temperature of the coffee boiler.

PID Controls
- To program the boiler temperature, the user can press the left little button on the temperature display and then immediately press the right button to show the program temperature. The left button can be pressed for each degree to decrease, and the right button can be pressed once for each degree to be increased.
- The right button on the temperature display can be pressed and held to shut off the PID controller.
- The PID controller will stay on even when the main power switch is shut off.
- When turned off, the PID controller will remain to display OFF until the machine is unplugged.
- The PID can be set to Celcius or Fahrenheit. If the unit arrives with a temperature display in Celsius and you wish to change it, follow the following instructions: Before plugging the electrical cord to the electrical outlet, both buttons on the temperature display need to be depressed and held while another person plugs the electrical cord into the electrical outlet. Once F.03 is displayed, the two buttons can be released. Depress and release the right button once. It will display Celsius. Immediataely depress the right button and F will display. Leave alone for 20 seconds, unplug the electrical cord from the electrical outlet, and then plug it back in after waiting 10 seconds. The display will now be in Fahrenheit.
Steaming Milk
- Hit the steaming button and watch the indicator light to know when the temperature has been reached for steaming.
- Before turning the steam nozzle, point the end of the steam wand into an empty container or point it towards the drip tray. This is to get rid of any water that might first come out when you turn on the steam wand.
- When dry steaming begins exiting the steam wand, you can turn it off. You are now ready to start steaming your milk.
- Do not fill your milk pitcher more than halfway full with cold milk
- Make sure the tip of the steam wand is fully submerged before you turn on the steam.
- After you begin steaming, you can raise the steam wand so that the tip is barely submerged. If the tip is submerged too much the milk will begin to squeal meaning it needs more aeration. If you bring the tip too far out you will hear a heavy chirping or sucking sound. This will result in big bubbles and a possible mess.
- You should aim for slight chirping up until the milk reaches room temperature. At that point you can submerge the tip of the wand to one side of the pitcher to create a swirling motion. Continue this until the steaming pitcher becomes too hot to the touch or a couple seconds after you have to take your hand off of the bottom or side (this should be around 140°).

Pros
- P.I.D. - A seriously coveted feature even on commercial machines. Allows you to control the temperature of the boiler by degree, an important feature for pulling the best out of your coffee.  
- Professional size group directly connected to boiler for further temperature stability.  
- Includes one single pod filter basket for E.S.E. (Easy Serving Espresso) pods.  
- Steam wand can double as a hot water spout if steam knob is turned when not in steam mode.  
- The 3-Way Solenoid valve on the Steel Uno Professional does a better job at leaving a dry puck than on the Steel Uno Special Edition.
Cons
- Although bigger than the Steel Uno Special Edition boiler, it still isn't built to make multiple drinks. There is approximately 30-60 second wait time to go from coffee mode to steam mode (after depressing the steam switch)  
Product Care
- Plain water backflushing should be done at least once a week. To backflush, use the portafilter's backflush disc. Take out your single or double basket and securely place the blank insert into the portafilter. To perform a plain water backflush, place the portafilter into the group head. Then raise the brew lever all the way up for 15 seconds, and then lower it. Water will forcefully discharge out of the bottom of the group into the drip tray; this is normal. Repeat three to five times.
- Backflush with detergent like Cafiza (see options above) once every fifty extractions.

For most companies it's hard to find motivation for pushing out new products if you find yourself on top already. This is not, however, the case with La Marzocco.
