I think I understand the two different models, but what exactly is the difference between the Auto Volumetric and Mechanical models?

Hey, Drew. Great question. The biggest difference is pre-infusion. The MP model's paddle allows the barista to control the duration of pre-infusion because it is controlled manually. The AV, on the other hand, has a completely programmed pre-infusion, and allows you to hit one of the 4 presets and walk away.
