What does "with preinfusion technology" mean as it relates to pulling a shot?

Asked by: geng
Pre-Infusion, or "Pre-Brew" as it's occasionally referred to, is an important part of brewing both filter and espresso. Before full-infusion begins, water is added to the coffee grounds at low pressure and allowed to rest for several seconds. This allows the coffee to de-gas and release the carbon dioxide trapped within. This process basically primes the coffee and maximizes its solubility before water is added at full pressure.

what is the thermocompensated grouphead? How is this related to preinfusion?

Asked by: geng
That basically means the group head is "saturated" much like the E61 design. The head actually has water running through it to keep it hot and to prevent temperature loss during brewing and pre-infusion.
