Meshing the best of both immersion and percolation styles of brewing, the Bonavita Immersion Dripper is a versatile brewing device. The steep-and-release action is similar to the Clever Coffee Dripper, but Bonavita's device has a few of its own distinct innovations that it brings to the party. The first is that the brewer itself is made of ceramic, which is great for holding onto heat during your brew. It's also easy to clean and resistant to oily buildup, so it won't stain over time as some plastics will. The second core feature is that it uses an adjustable silicone stopper to control the drain rate of your brew. This means that you have total control over the contact time of your brews, and you aren't relying entirely on gravity to do the work. If you'd like to use a very coarse grind and a long steep, you can also factor in a very slow drip during the latter half of the brew if you like - allowing you to focus on sweetness and clarity rather than body. But if you want a punchier brew, you could also grind finer and go for a shorter drain to emphasize brightness and round out the body a bit while you're at it. A little more control over brewing variables truly goes a long way here.

The immersion dripper is compatible with your favorite Melitta-style #4 filters, including permanent basket filters if you're looking for a more full-bodied cup. The whole device is dishwasher safe, making it rather easy to keep clean. It's designed to brew right on top of your favorite mug or server, and can brew up to about 25 ounces of coffee, using roughly 40-50 grams of grounds. Like the Clever, this is a great brewer for the office or school, since brewing and cleanup are a cinch.

It's messey

I love ceramic material and thought this would be ideal. The problem was with the valve at the bottom which allows it to be used for immersion brewing. When it opens, coffee invariably squirts out to the side and goes outside the cup below it. This creates a puddle which needs to be wiped up. If using it for a larger carafe, that might not be a problem.
