Affordable, Adaptable, Rock-Solid

When we commissioned the Canvas Cart, we had a few goals in mind: make it affordable, make it adaptable, and make it bulletproof. The result is a premium coffee cart available in three finishes — finished maple, finished walnut, and primed maple. Built from three-quarter-inch domestic plywood in either walnut or maple, the cart is extremely sturdy and finished with a polyurethane coating for light water resistance. It features two open cabinets with ample space for water pumps, reservoirs, or even a large mini fridge, along with a utility pass-through and a bottom exit for power and plumbing.

There are a few things I want to show you up close on the Oscar II. This particular model in front of me is direct-plumbable—you can tell by the water intake line on the back. Notably, though, the drip tray on the direct-plumbed model is not plumbable. There’s no drain outlet, which means this is self-contained, and you’ll need to dump it out every liter or so. That’s definitely something to consider if you’re using this in a light commercial environment.

One of the most compelling features of Canvas is that it’s fully collapsible and can be broken down in about five minutes or less. The panels are connected using Clam-X P14 Zeta connectors, which come apart with just a quarter turn using a simple Allen key, allowing the cart to be rebuilt anywhere without special tools. Canvas also offers a spacious 26.5-inch by 57-inch countertop, suitable for single- or two-group espresso machines like a Linea. While the cart doesn’t ship with pre-cut holes, the countertop can be customized for drain lines, water intake, and power.
