The Strada has seen multiple iterations over the years, now culminated into the most advanced and refined espresso machine to date. The Strada S exists for the busiest and more discerning cafes who need a machine that can produce drinks at high volume, and who want complete and precise control over every shot of espresso, especially in terms of brew temperature and yield, and statistics tracking.
AV or ABR Functionality
Strada S comes in two different configurations: AV (Auto-Volumetric) and ABR (Auto Brew Ratio). With AV, a flow meter is used to decide when to stop the pump, based on the amount of water that enters the group. In contrast, ABR uses built-in scales in the drip tray to determine when the desired yield is achieved. These features are all about ensuring that Strada consistently delivers a perfect shot of espresso every time you use it.
Compared to the old-school method of timing your espresso shots, AV takes things up a notch by automating the brewing process. This adds a whole new level of precision and consistency from one shot to the next. The problem with timing-based brewing is that it depends on how much resistance the coffee grounds create during the programmed brew time and how much water they soak up. With AV, the yield depends solely on how much water the coffee grounds soak up. Regardless of the resistance created by the grounds, AV machines keeps brewing until a specific volume of water has passed through the flow meter. This makes volumetric brewing more accurate and reliable, especially when other variables are changing.
ABR takes yield precision to another level entirely, removing the flow meter and instead weighing espresso yield in real time in the shot glass. This means your yield is no longer tied to resistance or absorption. It's all about what ends up in your shot glass. So, no matter how you tweak your coffee, grind size, or dose, your yield remains constant. With ABR, yield becomes an entirely isolated variable, separate from dose and grind size, making the task of creating an ideal recipe far more efficient.
Improved Ergonomics and Features
Strada S is equipped with a host of new (and old) design features that enhance ergonomics and further bolster its precision control. Standing only 19.7 inches tall, Strada S features a low profile that looks sleek, and further removes a barrier between the barista and the customer. Strada S was designed with an expansive drip tray, increasing the workspace for cup staging and other accessories like scales and cleaning cloths. The drip-tray in the AV model is also adjustable by height, accommodating for short or tall cups or counter height as needed.
Carried over from previous Strada models are a few important features, including a hot water economizer, allowing hot/cold water mixing to optimize flow and temperature from the hot water spout, dual cool-touch steam wands, and a multi-boiler system that allows each group head to be programmed to its own temperature, allowing the machine to better accommodate different coffees. Each group head of the Strada S is also saturated with hot water circulated from the brew boiler, allowing the machine to maintain its programmed brew temperature all the way to the portafilter.
Last, but certainly not least, Strada S is IoT-equipped, capable of tracking statistics and ready to connect with Mahlkonig’s new Grind-by-Sync technology (ABR only). This technology automates the task of dialing in grind size to achieve a programmed yield within a specified brew time. Expected to be released in early to mid-2023, this technology is poised to revolutionize the cafe workflow by adopting the finest elements of super-automatic design while maintaining the physical independence of grinding, brewing, and tamping.
