83mm Conical Burrs
At the core of Aries is a colossal 83mm titanium-coated conical burr set, optimized for multi-purpose use from espresso to filter. Normally found in commercial espresso grinders 3x its price and size, these special dodecagonal 83mm burrs allow for fast, quiet grinding below conversational volume and at low RPM. The cup profile is characterized by syrupy body and medium clarity, offering distinctly more clarity than the average conical burr. The overall flavor profile is often rounded with softened, yet distinctly present, acidity. An RPM control knob located on the side of the grinder offers a range of RPM from 90-150, allowing for some experimentation.
Optimized For Low Retention
Aries was designed with a focus on low-retention single-dosing. One standout feature of this grinder is its effortlessly removable cone burr carrier, enabling tool-free uninstallation or reinstallation in 3 seconds or less without disturbing the current grind setting. This design encourages disassembly, and even transforms it into a hassle-free aspect of regular workflow. Not only does this promote grinder cleanliness, but it also facilitates almost complete elimination of grounds retention. Remarkably, even without the removal of the burr, Aries achieves a dosing variance of merely +/- 0.1g with an RDT protocol (that means misting the beans with a little water to diffuse static before grinding!) Taking the extra step to remove the burr between grind cycles proves particularly advantageous when transitioning between extreme grind sizes, ensuring zero contamination from retained grounds. Further aiding in its low-retention design is an integrated knocker to clear the chute, and a rotating sweeper in the hopper which helps ensure that all beans are ground and no blockages occur.
