Brewing instructions:

  1. Open the Chemex-Bonded® Coffee Filter into a cone. One side should have three layers. Place the cone in the top of your coffeemaker with the thick portion toward the pouring spout.
  2. Using Regular or Automatic Grind coffee only, put one rounded tablespoon of coffee per 5 oz. cup into the filter cone. If you prefer stronger coffee, use more; there is never any bitterness in coffee brewed using the Chemex® method.
  3. When the water is boiling, remove it from the heat until it stops boiling vigorously. It should now be at about 200ºF, a perfect brewing temperature. Pour a small amount of water over the coffee grounds, just enough to wet them without floating. This is important because it allows the grounds to "bloom," so the desirable coffee elements can be released.
  4. After this first wetting simply pour more water, soaking the grounds each time, but keeping the water level well below the top of the coffeemaker. Once the desired amount of coffee is brewed, dispose of the spent grounds by lifting the filter out of the coffeemaker. Serve and enjoy.

Recommended starting parameters:

  • 36-42 grams of coffee

  • 600-700 milliliters of water heated to 200-205 degrees
  • 3:30-4:00 brew time
Manufacturer: Chemex
Model: CM-8A or CM-8GH
Width: 5-1/4"
Depth: 5-1/4"
Height: 9"

The Chemex® coffeemaker was invented by chemist Peter J. Schlumbohm, Ph.D., in 1941. Being a doctor of Chemistry, he was very familiar with laboratory apparati and the methods of filtration and extraction. He applied this knowledge when designing his coffeemaker by modifying the laboratory funnel, adding an "air channel" and a pouring spout. He added the "air channel" so the air displaced by the liquid dripping into the vessel could easily escape past the laboratory filter paper. Over the years, these items have been recognized as outstanding examples of American Design. In 1956, the Chemex coffee maker was selected by the Illinois Institute of Technology as one of the best-designed items of modern times, the only coffee brewer chosen for the award. The coffee maker and the water kettle are in the permanent collections of museums such as the Museum of Modern Art in New York, the Smithsonian, the Philadelphia Museum and the Corning Museum located in Corning, NY. When it comes to exceptionally tasting coffee made from a simple but elegant process, the Chemex has no rival.

Rated 5 out of 5 by from Chemex + Kone -- Yowza! This review is for the Chemex + Kone. I'm not sure what I have to add to the numerous blog and and forum posts about the combination. But in case further "testiony" is needed, the Kone moves the Chemex one step closer to French Press in the sense of adding oils, body, varietal nuance, and impact, while retaining the Chemex's nearly all of the essential clarity. Additionally, the method is more convenient than paper filters and produces less waste. The Chemex itself is a beautiful piece of glass, lovely enough to be kept in the open, and adds grace to any table. Don't forget to order the top and brush for the Chemex when you order.

Rated 5 out of 5 by from Great Tasting coffee!!! I bought this with a complete pourover set from Prima for a christmas present for my husband... he had never made pourover coffee before but we LOVE getting it at a cafe near our house.... this was perfect! We watched tutorials on youtube and now he is making it about twice a day for us :-) DELICIOUS, and the chemex pot has a beautiful, simple design that is easy to clean. You can really taste the difference. Love love love, would recommend this product to anyone. Shipped quickly as well!

Rated 4 out of 5 by from Amazing, as expected. I've known about the virtues of the Chemex for years now, having worked in the coffee industry when I was younger, but finally sprung for one of my own. I am the only coffee drinker in my house, so I've been brewing single cups (Kalita Wave, Clever, Aeropress) for as long as I can remember. I really have no use for automated coffee brewers and think that they all produce sub-par coffee, no matter how many hundreds of dollars you spend. The Chemex fills that space when I need to make coffee for guests or visitors, or simply need a few more cups in the morning. And, it always tastes great.

Rated 5 out of 5 by from sixty years ago we had a chemex, loved it then Recently purchased the Chemex, l love it, clear clean and classy. I use only organic, fair trade coffee, Thanksgiving Coffee from Fort Bragg, CA. Sixty years ago we had one, used it for years, it broke.....Forgot about until I became dissatisfied with all coffee makers.

Rated 5 out of 5 by from Classic method great for emphasizing high notes I purchased this chemex recently, and I'm quite happy that I did. It shipped quickly and for free. This method appears to really emphasize clarity, and I'm currently enjoying it with a few brighter Central American coffees and several African coffees (especially natural process!). I have not tried any Indonesian or fuller-bodied American coffees yet, but I'm curious to see what parts of their profiles shine through. I'm still refining my method, but have already made several great batches. There are many (quite) different brew guides out there to experiment with, but the chemex filters are pretty forgiving so it does not take very long to find a reliable method for a good cup. It appears to me that the larger the batch is the better the brew, so I use this chemex for 2-3 people with about 650-700mL water input.

Rated 5 out of 5 by from Form follows function for great tasting coffee I had the task of replacing an heirloom of a Chemex coffee maker purchased in the 1960's. It was recently broken by a house guess who was truly enamered by my great tasting coffee in the "cool glass container." So I was pleasantly surprised to find Prima and their loyal commitment to Chemex and Buono coffee products. Excellent connoisseurs of fine coffee and accoutrements. Bravo...and thanks for the rescue! Forever fan!

Rated 5 out of 5 by from Love the Chemex! Chemex has turned me into someone curious about coffee into someone who loves coffee. The flavors that come out of this are amazing. I seek out freshly roasted beans, own my own grinder, and make coffee when I crave something delicious instead of just for the caffeine content. Chemex is so easy to use and makes drinking coffee in the mornings an absolute treat. It's slightly time consuming, but well worth the wait.

Rated 5 out of 5 by from Amazing coffee!! I was a barista for a few years and I can honestly say that this is the best cup of coffee I have ever made. So much body and flavor and NO bitterness, no burnt taste, just pure delicious coffee flavor. We have an old junky coffee grinder and it still turned out amazing! I can only imagine how much better it would be with a high quality grinder. HIGHLY recommend and such an affordable price!

Rated 5 out of 5 by from Shipped fast, Great seller This seller shipped within a few days, in time for Xmas. The coffee maker is great quality, a durable glass, though I'm sure it can break. The glass gets hot while brewing, but the base is thicker, so it won't damage counters so easily. It pours well too, with no dripping. The package came with a surprise Prima coffee mug! I'll definitely buy from Prima again.
