Developed in partnership with a team of champion baristas, the Nuova Simonelli Mythos One's Clima Pro tech is the feature most central to its design. The problem is this: espresso grinders take some time to warm up first thing in the morning, and tend to run hot during peak periods in the day. This temperature variance affects how the coffee responds to grinding, as well as how the shots pull - meaning your product's consistency depends entirely on an attentive barista.

With Clima Pro, Nuova Simonelli set out to address this issue, by determining - with a team of experienced professional baristas - what the ideal grinding temperature is for espresso, and how to go about maintaining that temperature in the grinder. Clima Pro does just that, by maintaining a temperature range between 35 and 45 C, utilizing both a heating element to warm the grinder in the morning, and a fan and duct system to cool the grinder during daily usage. This ideal range adds consistency to grinder and shot performance, meaning less grind adjustment and lower waste for your cafe.

The Mythos One also boasts 75mm flat burrs, coated with titanium for a longer life. The electronic controls are easy to use for programming in your desired timed doses, and can also be run in Barista Mode to easily and quickly set custom doses on the fly. The micrometric adjustment dial is smooth and simple to adjust with precision - no need to be a championship arm wrestler to dial in your shots. Grind retention is so minimal. you will hardly need to think about purging between grind sessions or adjustments, and the spout churns out a fluffy clump-free grind every time.

Going from a mazzer jolly to this has been amazing

This has made both myself and my employees much cleaner, faster and more consistent! I'm going to guess we are saving 10-20 percent in wasted shots and spilled or stale grounds being tossed out. At that rate I will have paid for this grinder in 6-8 months in coffee savings alone. Not to mention how quiet and fast it grinds. Much faster pulling shots than before, that can only mean happier customers. Very consistent shots all day long. Expensive but worth it so far.

Consistent grind everytime

Brought this unit in as my main espresso grinder. We also have a Mahlkonig EK-45, 3 barzata and Mazzer for decaf espresso. We opened a new shop in April of this year and the staff trained using the unit, when I introduced the Mazzer to the mix the staff was sure that I had just picked up a cheap piece of junk for the decaf and would do everything possible to avoid using it. This grinder is a workhorse and provides a consistent grind every time. It is unbelievably easy to dial in and although we check our grind several times a day, we have gone weeks before without the need for adjustment. It's a bit pricey, but I feel like it is worth the dollars and I would buy another in a heartbeat.

This is the best grinder out there.

I bench tested several grinders with staff and this grinder was the preferred choice out of several. The main reason was ease of use and cleanliness. Shot times and dosing are very consistent. So far I have nothing negative to say.

excellent for high-volume cafes

Got this grinder for a high volume specialty cafe and couldn't be happier with it. Adjustment of the dose time down to the hundredth of a second plus low RPM grinding allows for highly accurate and consistent doses. Once the burrs were adequately seasoned (~25kg) you can grind 2-4kg through it without having to adjust the grind, even during periods of heavy use. Low grind retention which allows for less purging between grind adjustments. It even clips the portafilter to to grinder freeing up the baristas hands as the shot is grinding. My only gripe is that it's difficult to know when to refill the hopper as it sits inside the grinder rather than on top of it.

Good for quiet establishments. Flat Burrs are a real handicap here,

The Mythos One is an absolutely fine grinder for low to medium volume cafes. Busier establishments however would be wise to avoid for the following reasons. 1) The flat burr simply gets way too hot! On a weekend we have one person on shots and another on pouring. This sends the grinder haywire! We have to dramatically increase the dosage time and fine up the grind a full number to keep the shots around 30 seconds. The ground coffee becomes quite hot to touch. 2) Been a flat burr this grinder is quite slow. We only use double portafilters and we set the grinder to around 9.6 seconds and gradually need to increase to 10.5seconds when we get busy. 3) Been picky here but it is annoying, The hopper shut off will gradually vibrate closed approximately every couple of hours! We had to use blue tack to hold it open. 4) Picky again. Its difficult to see when you are running out of beans because of the damned coloured lid. Most times you will discover your empty half way through filling your portafilter. After using this grinder over the last month I get the feeling that is a step in the right direction however that it is a work in progress. The vertical burrs that grind directly above the portafilter handle is quite clever. Stick with Compak.

Disappointment, and makes me doubt temp controlled grinding.

I remember when I first heard about this grinder I thought to myself, "This solves all my problems when it comes to grinding," and that is only true to some degree. The ClimaPro is the perfect example of a product that has a lot of hype and big names behind, but not much else to back it up. First off, the big claim to the ClimaPro was that you could use it all day and only have to adjust one or twice. I found myself having to baby this grinder constantly because of the inconsistencies of my extractions. Secondly, the heating element within the grinder is set too hot, which I think is a huge reason for this grinder's fickle nature. When coffee beans have been sitting idle on top of heated burrs, it's inevitable for the beans to continue to roast within the grinder, giving it a roasty, unpleasant flavor within your espresso, despite the coffee you are using. Lastly, if you are a Extract MoJo geek like me, you will appreciate this. I find it basically impossible to extract at the desired 18-22% even if you extract at 45-50 seconds, which is not good for bar flow at a busy shop. The shots can just taste sour at times, not matter how long you pull them. I will have to say that the one positive thing about this grinder is the consistency of dosing. It was spot on a majority of the time. I will probably ending up selling this grinder, but if you can make it work it your favor, I applaud you.
