100 Years of Reliability
For the better part of a century, La Marzocco has not only become one of the most well-known names in the coffee industry, but is also constantly pushing the envelope of what is possible with espresso; the Linea Classic S auto-volumetric (AV) espresso machine does exactly that. The Linea Classic S AV improves on many of the features of its 30-year-old predecessor while still maintaining the clean, simple aesthetic that baristas all over the world have come to know and love. Many features are controlled by new, updated push buttons that offer better tactile feedback and a new, half-turn steam knob has been added, which requires less movement by baristas to reach full steaming power, reducing the risk of wrist fatigue and injury over long periods of time.
The updated Linea Classic S AV is an auto-volumetric espresso machine, meaning that the amount of water that passes through the group head can be programmed to achieve a consistent shot volume. Once the programmed amount of water has passed through the coffee puck, the machine will automatically disengage the shot. This allows the barista to steam milk or perform other tasks while the espresso shot pulls without worrying about having to stop the shot manually: a feature that optimizes workflow in the busiest settings. The La Marzocco Linea Classic S AV still uses dual boilers for unparalleled espresso brewing and milk steaming, but a dual PID now gives baristas the ability to control the boilers electronically and quickly. Saturated groups, with their constant water circulation, ensure thermal stability is never sacrificed, even during those peak rush hours.
Pro App Compatible
La Marzocco has been taking tremendous steps forward with their Pro App, and the Linea Classic S AV is entirely capable of utilizing these updates. The Pro App allows baristas to connect directly with the machine in order to make quick changes to a wide array of controls right from their phone or tablet. Just a few of the things that can be changed with the Pro App are the coffee and steam boiler temperatures and, in the case of the Linea Classic S AV model, the ability to program shot times. The Pro App is constantly being updated by La Marzocco, which means that new features will be available without the hassle of removing old hardware and replacing it with updated components.
